The production of  sweet wine has already begun with the assistance of the good weather .
The varieties we use  are Liatiko,  Malvazia and Moschato. The over-matured grapes containing more than 320 gr/lt  sugar, have been already harvested.
Then, those were laid among the vines, on  the ground for sun-drying for 5 days.
So, they’ve been  shrieked and dehydrated, almost  like raisins and have acquired a higher sugar concentration.
When the grapes were transferred to the winery, a sweet smell of raisin, fig and honey was all over the place.
We compressed them with great difficulty, so they gave us a thick and concentrated grape must. The fermentation has already begun and a part of their sweetness will be converted into alcohol.
