100% Sauvignon Blanc, with a touch of Crete! The warm climate enriches the aroma and gives the wine body and soul, without taking away any of its zest and vivacity. This variety, among other international varieties, makes the most of the island's individual terroir, to reveal its character in a unique and most interesting manner.
In the area of Dafnes, near Heraklion (Crete), at 350 metres above sea level.
Classic white vinification with fermentation in stainless steel tanks, at a temperature of 18°C.
Alcohol : 12,82% vol
Residual sugar: 1,4 gr/lt
Total acidity: 5,5 gr/lt
Total Sulfur: 100 mg/lt
It can be aged up to 5 years. It develops a surprisingly different character over time. Fresh fruity aromas morph into toasty nuts, earthy, mineral, honey.
Gold-colored with lemon glints. Ripe, melony nose. Firm, full-body textured. Grisp, clean finish. A nicely made Sauvignon Blanc with plenty of character and good balance.
Should be served at 9-10°C and is best enjoyed with fish, shellfish, chicken, pasta, pork chops or briny and sour cheese.
